Haha! I can get through it as snacks in summer but not in winter. My local veggie store sells individual stalks (that've probably come off bigger bunches) - so you can just buy what you need.
Okay I used to do this, but now I dice the whole head and freeze what I don’t use for the next time I make something that calls for diced celery / a mirepoix. Or use a head of fennel. If it’s sweated down you don’t really notice a difference between the two!!!
As always, you've given me some recipes to add to my list, especially the lentil bolognese because like you, I've tried a few & they have never really hit the spot for me.
